Cinco de Mayo, Tuesday, Thursday, Sunday... is there ever NOT a good night for a taco party? 

Tacos lie smack in the middle of the Venn diagram of: 

– What can I make for dinner that everyone will be excited to eat? 

– What can I make for dinner quickly that’s also healthy? 

– What can I make for dinner that doesn’t cost a lot of money or take a lot of time? 

Today’s Supper Club recipe is fun because in addition to 15 minute ground beef, you’ll also make a quick salsa fresca and bright corn salad, bringing veggies and freshness to tacos. But of course, you can instead serve the tacos with store-bought salsa and a side of canned beans, and call it an easy night. And, if ground beef isn’t your jam, these are great made with ground turkey or Impossible meat, too. 

You can of course make it an actual party quickly by letting your kids invite friends to dinner, or texting your neighbors to bring over their favorite toppings. This meal comes together so easily that a midweek “party” is possible, and just might be the little pick-me-up that your house needs. (Or, share this recipe with your friends, and just maybe someone will get the hint and invite you over this week! 😉)

Assemble a taco bar with homemade salsa, a colorful corn salad, and classic beef filling.

  • Active Kitchen Time: 40-50 minutes
  • Yield: 4-6 servings


  • 4 tomatoes
  • 3 green onions
  • 1 bunch cilantro
  • 1 lime
  • 1 Tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 red bell pepper
  • 1 (15 oz) can corn
  • 1 (15 oz) can black beans
  • 3 tsp cumin
  • 1 lb lean ground beef
  • 1 Tbsp chili powder
  • 1 package corn or flour tortillas

Supper Smarts:

  • Speed it Up: Use storebought salsa instead of making your own — if you're eating with anyone not into spicy foods, get a mild salsa. Everyone can then adjust to their preferred spice level with hot sauce on personal tacos.

  • Flavor Town: Add guacamole, shredded cabbage, pickled onions, sliced limes, sour cream, and cheese to your taco bar.

  • Serving Suggestions: Let kids choose their own filling ingredients and build their own tacos — this is inevitably messier, but kids eat more and try more when serving themselves.


Make tomato salsa. Dice 4 tomatoes and add to medium bowl.
Thinly slice 3 green onions. Mince cilantro to make 2 Tbsp minced cilantro. Add to tomatoes.
Squeeze 1 lime over bowl and stir in 1 Tbsp olive oil. Season to taste with salt and pepper.
Make confetti corn salad. Dice 1 red bell pepper and add to medium bowl.
Mince or scissor cut cilantro to make 2 Tbsp minced cilantro. Add to red pepper.
Stir in 1 tsp cumin, 1 (15 oz) can corn, and 1 (15 oz) can black beans. Season to taste with salt and pepper. Set aside.
Make taco filling. Add 1 lb lean ground beef to pan set over medium high heat.
Break up the meat with a wooden spoon. Mix in 1 tsp kosher salt, ½ tsp ground black pepper, 1 Tbsp chili powder, and 2 tsp cumin.
Cook until meat is browned, about 15 minutes. Build taco. TASTE & SHARE!
