BBQ Chicken Salad

Ahh summer, don't go yet! This meal brings together all the peak produce of sweet corn, buttery avocados, juicy tomatoes, and crisp lettuce. It all adds up to a bright and flavorful salad that has a little something for everyone — even your pickiest eater!

Shopping List

Serves: 6

Fresh:

  • 1 tomato

  • 1 avocado

  • 1 head iceberg lettuce

  • small bunch cilantro

  • 1 lb boneless chicken breasts

  • ⅔ cup shredded cheddar cheese

  •  ½ cup canned or frozen corn

Pantry:

  •  ½ cup canned black beans 

  • 1 cup tortilla strips or crushed tortilla chips 

  •  ½ cup BBQ sauce 

  •  ¼ cup ranch dressing

Recipe Steps

To bake chicken, preheat oven to 425ºF and line baking sheet with foil.

Add 1 lb boneless chicken breasts, 1 tsp kosher salt, ⅛ tsp ground black pepper, and ¼ cup BBQ sauce to medium bowl. Flip with tongs to coat.

Set on baking sheet and put in oven. Cook 15-25 min, until internal temp is 165ºF. Cool 15 min.

Meanwhile, cut 1 head iceberg lettuce in quarters and remove core. Slice into thin strips. Measure 5 cups.

Add sliced lettuce and ¼ cup ranch dressing to salad bowl. Toss to coat.

Add ½ cup canned black beans and ½ cup corn to salad.

Add ⅔ cup shredded sharp cheddar cheese and 1 cup tortilla strips or crushed tortilla chips to salad.

Cut 1 tomato in slices. Dice into small cubes. Add to salad.

Cut 1 avocado in half and remove pit. Scoop out flesh with spoon. Dice into small cubes. Add to salad.

Cut cooled chicken into bite-sized cubes. Add to salad.

Trim away stems from 1 small bunch cilantro. Mince finely. Measure 2 Tbsp and sprinkle on top of salad. 

Add ¼ cup BBQ sauce to plastic bag. Seal top, snip small hole in one corner, and squeeze to drizzle over salad. Toss to serve.

Recipe Notes

  • Do you think cilantro tastes like soap? Have a child who hates avocado? Not a problem — make a salad bar and set out all the components in separate bowls and let everyone build the salad of their dreams.

  • Salad for dinner can be a tall ask for some kids, but this salad has so many layers of familiar and beloved food (hello, cheese and tortilla chips!) 

  • Get a picky eater started by asking them to take just one "hello" bite. An intro taste of a new food is key when sometimes determining if you like something doesn't happen until it's been tried a dozen times. Remember, it's a marathon, not a sprint!
