Shopping List

Yield: 4 servings
Active Kitchen Time: 20-30 minutes

Fresh:

  • 1 avocado

  • 1 head romaine lettuce

  • ¼ head purple cabbage

  • 1 lb lean ground beef

  • 1 cup salsa

  • 3 cups tortilla chips

  • 1 cup shredded cheddar cheese

Pantry:

  • 2 tsp cumin

  • 1 Tbsp chili powder

  • 1 tsp kosher salt

  • ½ tsp ground black pepper

  • 1 cup canned corn

Recipe Steps

Cut or tear 1 head romaine into thin ribbons. Add to large bowl.

Prepare for a build-your-own salad buffet. Gather six small bowls for use in steps 3-8.

Thinly slice or scissor-cut ¼ head purple cabbage in strips. Add to a small bowl.

Cut 1 avocado in half and remove pit. Scoop out and dice. Add to a small bowl.

Add 3 cups tortilla chips to a plastic bag. Use your hands to break into small pieces. Add to a small bowl.

Drain and rinse 1 cup canned corn. Add to a small bowl.

Add 1 cup shredded cheese to a small bowl.

Add 1 cup salsa to a small bowl.

Heat pan over medium-high heat. Add 1 lb lean ground beef.

Add 2 tsp cumin, 1 Tbsp chili powder, 1 tsp kosher salt, and ½ tsp ground black pepper. Stir and break beef into smaller pieces.

Cook beef until fully browned, about 7-9 minutes.

Assemble a salad buffet with lettuce, meat, and toppings. Build your own rainbow salad. TASTE & SHARE!

Recipe Notes

  • Speed it Up: Buy pre-chopped romaine and/or shredded cabbage.

  • Mix it Up: Add in any leftover cooked veggies, ground beef, or

    cooked chicken you may already have ready-to-go in your fridge.

  • Leftover Love: Use leftover ingredients for nachos or quesadillas.

  • Kitchen Helper: Have kids help gather bowls, crush tortilla chips, or

    add cheese, corn, and salsa to separate bowls while you cook the

    ground beef.

  • Dairy-free: Substitute dairy-free cheddar, such as Daiya® or Follow

    Your Heart®

  • Vegetarian: In lieu of ground beef, substitute 2 cans black beans,

    drained, or a plant-based meat substitute like Impossible®.
