Fresh:

  • 1 lb baby potatoes

  • 2 cloves garlic

  • 1 (12 oz) pkg green beans, trimmed

  • 4 (6 oz) skin-on salmon fillets

Pantry:

  • 3 Tbsp olive oil

  • 2 tsp kosher salt

  • ¹⁄8 tsp + ½ tsp ground black pepper 

  • 1 tsp garlic powder

  • 2 tsp brown sugar  

  • 1 tsp paprika

Recipe Steps

Preheat oven to 425°F. Line baking sheet with foil.

Cut 1 lb baby potatoes in half.

Add potatoes, 1 Tbsp olive oil, ½ tsp kosher salt, and ¹⁄8 pepper to medium bowl. Stir.

Spread in an even layer on baking sheet. Roast 15 minutes. 

Meanwhile, smash and peel 2 cloves garlic. Finely mince. 

Add 12 oz trimmed green beans, garlic, 1 Tbsp olive oil, and ½ tsp kosher salt to medium bowl. Stir.

Combine 1 tsp garlic powder, 2 tsp brown sugar, 1 tsp kosher salt, 1 tsp paprika, and ½ tsp black pepper in small bowl.

Pat 4 salmon fillets dry with paper towel. 

Remove potatoes from oven. Push to one side of baking sheet. Arrange green beans on other side. 

Add salmon to baking sheet, skin-side down. Brush with 1 Tbsp olive oil. Sprinkle with spices, pressing to coat tops and sides. 

Bake 12-15 minutes until salmon is cooked through and flakes easily.

Recipe Notes

  • When shopping for salmon, buy a piece with a firm texture and a deep even color throughout. Avoid anything that appears mushy or has a strong fishy smell.
