Swedish Meatballs

Shopping List

Serves: 4-6
Active Kitchen Time: 30-40 minutes

Fresh:

  • ½ lb lean ground beef 

  • ½ lb lean ground pork 

  • cranberry or lingonberry jam (optional, for serving) 

  • ¼ cup heavy cream 

  • ¼ cup milk 

  • 3 Tbsp butter 

  • 1 egg

Pantry:

  • ½ cup breadcrumbs 

  • ½ tsp onion powder 

  • ¼ tsp ground allspice 

  • 3 Tbsp flour 

  • 1 ½ cups beef broth 

Suggested Sides:

  • Egg noodles

  • Mashed potatoes

  • Salad

  • Sliced cucumbers

Recipe Steps

Preheat oven to 450°F. Line a bakingsheet with aluminum foil. Grease with cooking spray. 

Crack 1 egg in large bowl. Throw away shells and wash your hands. Whisk until smooth. 

Add ¼ cup milk, ½ cup breadcrumbs, 1 tsp kosher salt, ½ tsp onion powder, and ¼ tsp ground allspice. Whisk.

Add ½ lb lean ground beef and ½ lb lean ground pork. 

Use your hands to mix meat thoroughly. 

Shape meat into 1-inch mini meatballs. Set on baking sheet and wash hands.

Bake meatballs 12 minutes.

Meanwhile, prepare gravy. Melt 3 Tbsp butter in skillet over medium-high heat.

Add 3 Tbsp flour. Cook 3 minutes, whisking frequently, until golden brown.

Add 1 ½ cups beef broth and ½ tsp kosher salt. Bring to boil. Cook until thickened, whisking occasionally, about 3 min.

Turn off heat. Stir in ¼ cup heavy cream.

Use tongs to add meatballs to gravy.Serve with cranberry or lingonberry jam, if desired. TASTE & SHARE!

Recipe Notes

  • Scoop meat quickly using an ice cream scooper and just let balls be a little lumpy. They still taste delicious and will be much quicker to make!

  • Prepare extra meatballs and freeze leftovers – this makes a great freezer meal.

  • Gluten-free: Use gluten-free panko, such as Ian’s or Kikkoman. Use gluten-free flour, such as Bob’s Red Mill or King Arthur Flour.

  • Egg-Free: Replace egg with an egg replacer, such as Bob’s Red Mill Egg Replacer.

  • Dairy-free: Use dairy-free milk, such as almond, cashew, soy, or pea protein. Use dairy-free butter, such as Earth Balance or Melt. Use dairy-free milk, such as almond, cashew, soy, or pea protein.

  • Vegetarian: Make vegetarian meatballs with the following adjustments:

    • Step 2: Use 2 egg replacers.

    • Step 3: Omit milk, decrease salt to ½ tsp, increase breadcrumbs to 1 cup, and add ½ cup quick-cooking oats.

    • Step 4: Replace meat with 24 oz sautéed mushrooms.

    • Step 5: Add ingredients to a food processor and pulse until finely minced.

    • Step 10: Use vegetable broth.
