Fresh:
1 egg
2 ¾ cups (22 oz) whole milk ricotta
2 cups shredded mozzarella cheese
⅓ cup grated Parmesan cheese
½ cup fresh basil, loosely packed
Pantry:
1 (32 oz) jar marinara
1 (8 oz) box manicotti noodles
½ tsp kosher salt
Suggested Side:
roasted broccoli
Recipe Steps
Preheat oven to 375ºF. | Crack 1 egg in large bowl. Add 2 ¾ cups ricotta, 1 cup mozzarella, ⅓ cup Parmesan , and ½ tsp salt. Stir well. |
Finely mince ½ cup fresh basil. Add to cheese mixture. Stir. | Add cheese mixture to bag. Seal top and snip small hole in one corner. Open box of (8 oz) manicotti noodles. |
Gather top and squeeze to pipe. Set tip of piping bag in a noodle. Squeeze gently to fill, then turn and repeat with other end. Set in baking dish. Repeat for all noodles. | Pour 1 (32 oz) jar marinara sauce over noodles. Spread to completely cover. |
Cover with foil. Bake 40 minutes. | Remove foil. Top with 1 cup mozzarella1 mozzarella. Bake 15 min. Cool 15 min before serving. |
Recipe Notes
If you want to add some sneaky undetectable greens to this dish, mix in some chopped spinach to the cheese mixture before piping into the noodles.
